1-1/2 cups canned pumpkin
3 tbsp unsalted butter, melted
1/2 cup granulated sugar
1/4 cup maple syrup
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
3 eggs, separated
1/2 cup milk
1/4 cup whipping cream
Sweetened whipped cream for garnish
Preheat oven to 350°F. Line a 10-inch pie plate with pastry. Trim and flute edges. Combine all ingredients except egg whites and whipped cream for garnish; Mix thoroughly. Beat egg whites until stiff but not dry. Fold into pie mixture. Pour mixture into pie shell and bake until a toothpick inserted into centre comes out clean, about 50 minutes. Cool and serve with sweetened whipped cream.
